Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Green papaya
- Long beans
- Tomatoes
- Garlic
- Dried shrimp
- Peanuts
- Fish sauce
- Lime
Steps
- 1Peel and shred unripe green papaya into thin, long strands using a knife or grater.
- 2Pound garlic and fresh chilies in a large mortar until roughly crushed, then add tomato wedges and long beans cut into short lengths, bruising them lightly with the pestle to release their juices.
- 3Add dried shrimp, fish sauce, lime juice, and palm sugar to the mortar and pound briefly to combine.
- 4Add the shredded papaya in batches, pounding and tossing with a spoon between additions so the flavors work into the strands without crushing them to mush.
- 5Taste and adjust the balance of sour, salty, sweet, and spicy, adding more lime, fish sauce, or sugar as needed.
- 6Scatter crushed roasted peanuts over the top and toss once more.
- 7Transfer to a serving plate and serve fresh alongside sticky rice and grilled chicken.
