  • Split red lentils
  • Whole prawns
  • Onion
  • Green chili
  • Curry leaves
  • Rice flour
  • Vegetable oil

Steps

  1. 1Soak split red lentils in water for a couple of hours, then drain and grind them coarsely, leaving some texture rather than a smooth paste.
  2. 2Mix the ground lentils with finely chopped onion, green chili, and curry leaves, along with a little rice flour to help bind the mixture.
  3. 3Season the batter generously with salt, then shape small portions into flat, round patties using wet hands.
  4. 4Press one or two whole prawns firmly into the top of each patty so they sit visibly embedded in the surface.
  5. 5Heat oil in a deep pan or wok until shimmering hot.
  6. 6Carefully slide the patties into the oil, prawn side up, and fry them for a few minutes per side, until deep golden brown and crisp.
  7. 7Drain the fritters briefly on paper towels to remove excess oil.
  8. 8Serve hot, wrapped in newspaper or a paper cone, as is traditional from beachfront vendors along the southern coast.
