Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Chickpeas
- Tahini
- Garlic
- Lemon juice
- Olive oil
- Cumin
Steps
- 1Soak dried chickpeas overnight, then drain and cook them in fresh water with a pinch of baking soda for about an hour, until they turn very soft and start to fall apart.
- 2Drain the chickpeas, reserving some of the cooking liquid, and let them cool slightly.
- 3Blend the chickpeas with tahini, minced garlic, lemon juice, and a splash of the reserved cooking liquid in a food processor.
- 4Process for several minutes, scraping down the sides occasionally, until the mixture turns completely smooth and creamy.
- 5Add more cooking liquid a little at a time if the hummus seems too thick, blending until the texture turns light and airy.
- 6Season with salt and cumin, tasting and adjusting the lemon and garlic to balance the flavor.
- 7Spread the hummus onto a plate in a wide swirl using the back of a spoon.
- 8Drizzle generously with olive oil and serve with warm flatbread.
