Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Rice flour
- Coconut milk
- Yeast
- Sugar
- Egg
- Salt
Steps
- 1Mix rice flour with coconut milk, a little sugar, and yeast into a thin, pourable batter.
- 2Cover the batter and let it ferment in a warm spot for several hours, until it turns bubbly and slightly tangy.
- 3Heat a small curved hopper pan over medium heat and lightly grease it.
- 4Ladle in a portion of batter and immediately swirl and tilt the pan so the batter coats the sides thinly while pooling slightly in the middle.
- 5Crack an egg into the center for egg hoppers, if using, and season with a pinch of salt and pepper.
- 6Cover the pan with a lid and cook for about 3 minutes, until the edges turn lacy and golden brown and the center sets.
- 7Gently loosen the edges with a spatula and lift the hopper out onto a plate.
- 8Serve warm with spicy sambal or a vegetable curry.
