Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Lamb
  • Lentils
  • Chickpeas
  • Tomatoes
  • Celery
  • Onion
  • Flour
  • Fresh herbs

Steps

  1. 1Cut lamb into small pieces and brown them in a large pot with chopped onion, celery, and a mix of spices.
  2. 2Add chopped tomatoes and cook for a few minutes, stirring, until they begin to break down.
  3. 3Add lentils, soaked chickpeas, and plenty of water, then bring the pot to a simmer.
  4. 4Cook for about an hour, skimming occasionally, until the lentils, chickpeas, and meat all turn tender.
  5. 5Whisk a little flour with water to make a smooth slurry, then stir it into the soup to thicken it slightly.
  6. 6Simmer for another 10 minutes, stirring occasionally to prevent sticking, until the soup reaches a hearty, comforting consistency.
  7. 7Stir in plenty of fresh chopped cilantro and parsley near the end of cooking.
  8. 8Serve hot, traditionally to break the daily fast during Ramadan, with dates and bread on the side.
