Ingredients

  • Shrimp
  • Cornmeal
  • All-purpose flour
  • Buttermilk
  • Cayenne pepper
  • Vegetable oil
  • French bread roll
  • Lettuce
  • Tomato
  • Pickles
  • Mayonnaise
  • Hot sauce

Steps

  1. 1Soak peeled shrimp in buttermilk seasoned with a dash of hot sauce for about 15 minutes to tenderize them.
  2. 2In a shallow dish, mix cornmeal, flour, cayenne pepper, and salt together.
  3. 3Heat about 2 inches of vegetable oil in a heavy pot to 350 degrees Fahrenheit.
  4. 4Lift the shrimp out of the buttermilk, letting the excess drip off, then dredge each one thoroughly in the cornmeal mixture.
  5. 5Fry the shrimp in small batches for 2 to 3 minutes, until the coating turns golden brown and crisp.
  6. 6Drain the fried shrimp on a wire rack while you split open a crusty French bread roll.
  7. 7Spread mayonnaise mixed with a little hot sauce along the inside of the roll.
  8. 8Layer in shredded lettuce, sliced tomato, and pickles, then pile the hot fried shrimp on top.
  9. 9Close the sandwich and serve it right away while the shrimp are still crackling hot.
