Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Black beans
  • Pork ribs
  • Sausage
  • Bacon
  • Onion
  • Garlic
  • Bay leaves
  • Orange

Steps

  1. 1Soak black beans in water overnight, then drain.
  2. 2Place the beans in a large pot with pork ribs, bacon, and sausage, cover generously with water, and bring to a simmer.
  3. 3Cook for about two hours, skimming any foam and adding more water as needed, until the meats turn tender and the beans soften into a creamy consistency.
  4. 4In a separate pan, sauté chopped onion and garlic in a little oil until golden.
  5. 5Stir the sautéed onion and garlic into the pot along with bay leaves, letting everything simmer together for another 30 minutes to deepen the flavor.
  6. 6Remove some of the meat, chop it into smaller pieces, and return it to the pot to help thicken the stew further.
  7. 7Season with salt and let the feijoada simmer uncovered for a final stretch, until it reaches a hearty, thick consistency.
  8. 8Serve with rice, sautéed collard greens, and orange slices on the side to cut through the richness.
