Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Dried chickpeas
  • Parsley
  • Cilantro
  • Garlic
  • Onion
  • Cumin
  • Coriander

Steps

  1. 1Soak dried chickpeas in plenty of water overnight, then drain them thoroughly without cooking.
  2. 2Combine the raw soaked chickpeas with parsley, cilantro, garlic, onion, cumin, and coriander in a food processor.
  3. 3Pulse the mixture until it forms a coarse, well-combined paste that holds together when pressed, being careful not to blend it into a smooth puree.
  4. 4Stir in a little baking soda and let the mixture rest in the refrigerator for about 30 minutes so the flavors meld.
  5. 5Shape the mixture into small patties or balls using your hands or a falafel scoop.
  6. 6Heat oil in a deep pot to about 350 degrees Fahrenheit.
  7. 7Fry the falafel in batches for about 3 to 4 minutes, until deeply golden and crisp outside while staying soft and green inside.
  8. 8Drain on paper towels and serve in warm flatbread with tahini sauce and pickled vegetables.
