Steps
- 1Mix gochujang, gochugaru, soy sauce, minced garlic, and grated ginger together into a thick, spicy marinade.
- 2Cut chicken thigh into bite-sized pieces and toss them thoroughly in the marinade, letting them sit for at least thirty minutes.
- 3Heat a large, flat pan or griddle and add the marinated chicken, spreading it out in a single layer.
- 4Add chunks of cabbage, sliced sweet potato, and rice cakes around the chicken on the same pan.
- 5Cook everything together over medium-high heat, stirring and flipping occasionally, for about fifteen minutes, until the chicken is cooked through and the vegetables have softened.
- 6Let the mixture continue cooking, undisturbed for short stretches, so some pieces develop a light char against the hot pan.
- 7Scatter chopped scallions and sesame seeds over the top once everything is cooked.
- 8Serve directly from the pan at the table, with the option to stir in cooked rice at the end to soak up the spicy sauce.
