Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Chicken
  • Preserved lemon
  • Olives
  • Onion
  • Ginger
  • Turmeric
  • Saffron
  • Cilantro

Steps

  1. 1Season chicken pieces with salt and pepper and brown them in a little oil in a tagine or heavy pot over medium-high heat.
  2. 2Remove the chicken and add sliced onion, grated ginger, turmeric, and a few threads of saffron to the same pot, cooking for a few minutes until fragrant.
  3. 3Return the chicken to the pot and add a small amount of water or stock, just enough to keep things from sticking.
  4. 4Cover and let the chicken simmer gently over low heat for about 45 minutes, until very tender.
  5. 5Stir in preserved lemon, cut into strips, and whole or pitted olives during the last 10 minutes of cooking so their flavor stays bright.
  6. 6Check the sauce and let it reduce slightly with the lid off if it seems too thin.
  7. 7Scatter fresh cilantro over the top just before serving.
  8. 8Serve directly from the tagine with warm bread or couscous to soak up the sauce.
