Ingredients

  • Rice
  • Saffron
  • Ground beef
  • Tomato paste
  • Peas
  • Mozzarella
  • Eggs
  • Breadcrumbs
  • Vegetable oil

Steps

  1. 1Cook rice with a pinch of saffron until tender and let it cool completely so it holds together when shaped.
  2. 2Meanwhile, brown ground beef with onion and tomato paste, stirring in peas, to make a thick ragu filling.
  3. 3Scoop a portion of the cooled rice into your palm and press a hollow into the center.
  4. 4Spoon in a little of the ragu filling along with a cube of mozzarella, then mold more rice around it to fully enclose the filling into a ball or cone shape.
  5. 5Roll each rice ball in flour, dip it in beaten egg, then coat thoroughly in breadcrumbs.
  6. 6Heat vegetable oil in a deep pot and fry the arancini in batches until deep golden brown and crisp all over.
  7. 7Drain briefly on paper towels and let them rest for a minute before serving, since the molten cheese center stays very hot.
  8. 8Serve warm as a handheld snack, straight from the paper wrapper they are traditionally sold in.
